Top of the morning to you from my recent adventure to Japan! Morning/Mom hair, hotel-supplied PJ’s and all, as were served breakfast in our hotel room. :) Here I am!! Ps: I love eating on the floor! I tried to convince my significant other to swap our kitchen table for a low Japanese table where we sit on the floor all the time, but he was not so into that idea!

When I was traveling in Japan, Korea and China I loved all the variety of mushrooms I found. Shrooms are actually a symbol of longevity in Asia because of their health-promoting properties.

Mushrooms are unique, in that they are a fungus—a special type of living organism that has no roots, leaves, flowers or seeds. Pretty amazing huh?! They may be considered a humble fungus but all-around they are surprisingly nutritious and retain many of their nutrients even when cooked—making them a great nutrition veggie cooked, or raw.

They are low in calories and contain antioxidants, including ergothioneine 5 (which protects cells), fights against oxidative damage, keeps you feeling young and fresh, protects your health, while providing plenty of veggie protein!

If you’ve given my Probiotic Beauty Slaw recipe a try, then you know all about its health benefits. It’s really one of the best ways to incorporate more cabbage into your diet. I also love to use this veggie in yummy dishes like this stir-fry—it’s so easy to chop up and throw into the mix.

Thiscruciferous vegetable is an excellent source of vitamin C and manganese, and its phytonutrients rank at the top of the list for phytonutrient antioxidants. It’s important to note that if we don’t take in a sufficient amount of antioxidants our oxygen metabolism can become compromised—experiencing the metabolic problem known as oxidative stress.

Also, with insufficient amounts of anti-inflammatory nutrients, regulation of our inflammatory system can become compromised—leading to possible chronic inflammation, illness and accelerated aging.

There are also anti-inflammatory compounds found in red cabbage, called anthocyanins—making it stand out from the rest.

Cabbage contains a variety of nutrients that have the potential to benefit our stomach and intestinal linings. These nutrients would include glucosinolates and the anti-inflammatory isothiocyanates (or ITCs made from them), antioxidant polyphenols, and the amino acid-like substance called glutamine.

By incorporating anti-inflammatory and vitamin A, vitamin C and E-rich food like cabbage into your diet, you can also help in lowering cortisol levels—which is important for helping us feel more chilled out! :) As well as balanced and healthy, diminishing crow’s feet, and preventing lines from forming in the first place.

Cabbage is really an easy veggie to toss into just about anything really, from salads to slaws, and soups, so take full advantage, knowing you’re receiving some amazing beautifying nutrients that will keep you beautiful from the inside out.

Beauty Citrus: Limes

Did you know that limes have loads of vitamin C and enzymes, and cleansing properties? They do! And what better way to keep the natural cleansing process going than by adding this beauty fruit to your recipes whenever you can.

Because exogenous toxins (from air pollution, contaminants in the food and water supply, etc.), are constantly being assailed upon us, it’s important to practice ongoing cleansing, which doesn’t always imply chugging down liquids all the time. It also has everything to do with what foods we choose to eat on a daily basis.

Even if you lived in a little bubble and had no exogenous toxins threatening you, there are all those endogenous toxins—the ones created internally from the natural bi-products of metabolism and cell renewal! So it’s a no-brainer that the more we can help support our body’s own natural cleansing properties, the better.

And because the liver is our main fat-burning organ we need to only feed our body with the best ingredients—giving this precious organ it’s own shot of energy to keep things moving and flowing—the way nature intended.

Mushroom & Napa Cabbage Lime Stir-fry Recipe

Servings 2 servings

Ingredients

  • 1 cup cooked quinoa
  • 1 tsp. coconut oil
  • 1 cup crimini mushrooms sliced
  • 1 ½ cups of cabbage sliced
  • 1 ½ tsp. coriander powder
  • 1 ½ tsp. cumin powder
  • 2 Tbs. lime juice
  • Sea salt to taste
  • Chopped fresh cilantro for topping

Instructions

  • Heat the coconut oil over medium heat, and add the mushrooms and cabbage. Stir well for a few minutes until the veggies soften.

  • Add in the coriander powder. Turn off the heat and stir in the lime juice, and sea salt to taste.

  • Top with fresh cilantro. Serve fresh with the quinoa.

  • Enjoy!

  • Note: If you have a more delicate system, having cooked cabbage( as in this recipe), might be easier for your system to handle than raw cabbage.
