Ingredients

This recipe is incredibly simple and you’ll only need 4 simple ingredients. Here’s what you’ll need:

A dutch oven with lid is needed for this recipe. And I like to use parchment paper for extra easy clean up, but isn’t required. Simply greasing the pot well will work just fine.

Instructions

Use a wooden spoon to mix all ingredients together in a large mixing bowl until well incorporated, but be sure not to over mix.

Cover with a tea towel and allow to rest for 8-12 hours at room temperature.

If I am making this ahead for the next day, I simply mix it before bed and bake it in the morning to serve with breakfast.

Otherwise, I will mix up a batch of bread and allow it to rest in the pantry during the day to bake up for dinner.

Hint: the longer you allow it to sit, the better the flavor!

After the artisan loaf has risen for 8-12 hours, gently fold and shape into a loose ball. The top will be slightly dry from sitting out so long. Simply, roll it into a ball and place the seam side down in the dutch oven while baking.

This dough will be sticky. Sprinkle your hands lightly with flour to help prevent the dough from sticking.

Add the dough ball inside of a greased dutch oven or use a piece of parchment paper to line the inside.

Place the lid on top of the dutch oven and bake.

After 30 minutes, remove the lid and bake for additional 15 minutes to give the crust a nice golden brown color.

Allow the bread to cool before slicing. You could move it to a cooling rack or cutting board to cool before cutting the bread.

And be sure to use a sharp knife or bread knife to slice the loaf.

FAQs

Why do you put vinegar in no-knead bread? ›

Vinegar – I use my homemade apple cider vinegar but any vinegar will do, it helps create a better texture in no-knead bread recipes.

What ingredient makes bread soft and fluffy? ›

Add Sugar

Adding sugar weakens the gluten structure, absorbs water, and eventually makes the bread lighter and softer. As a result, sugar improves the bread's taste, structure and texture. Yeast also eats up sugar to produce carbon dioxide, which raises the dough and makes bread fluffy.

Does artisan bread need to rise twice? ›

This real artisan bread calls for a 12-hour rise of the starter and then another two 45-minute rises. Remember, you don't have to do absolutely anything while the bread is rising.

Does no-knead bread need a second rise? ›

No-knead bread gets its power from a long, slow rise at room temperature. Mix up the dough in the morning and let it sit for at least six hours before shaping and rising for one hour more. The bread bakes for 30 minutes covered and 15 minutes uncovered in the Dutch oven.

Why do you put vinegar in bread? ›

And It's not just cakes that benefit from a touch of vinegar, but also biscuits, muffins, and even bread. So when it comes to bread, it's the same concept – vinegar inhibits gluten formation which leads to a more relaxed and extensible dough, resulting in a less dense and chewy bread.

Why is my homemade no knead bread so dense? ›

Why is my bread dense: Usually bread will be too dense when there is too much flour. Keep in mind this dough will be pretty sticky, do not add more flour than specified. Other factors that come into play are humidity and age of flour. Little yeast, long rise, sticky dough are keys to a good, light loaf.

What is the secret to moist bread? ›

Fortunately, one of the most glaring baking problems has an easy solution: ensuring your bread stays moist. The key is twofold: use quality ingredients and let the dough stand overnight. If you're using storebought flour, opt for “bread flour,” which will hold better in heat and help create a more tender crumb.

What makes bread airy and fluffy? ›

Carbon dioxide is responsible for all the bubbles that make holes in bread, making it lighter and fluffier. Because gas is created as a result of yeast growth, the more the yeast grows, the more gas in the dough and the more light and airy your bread loaf will be.

Is it better to use oil or butter for bread? ›

When you substitute oil for butter, you need to take note of the texture. If you want delicate, soft, and tender baked goods, I recommend using oil vs. butter. Butter will result in a denser crumb and not be as moist.

Why is my homemade artisan bread so dense? ›

Make sure that your dough is not too wet or too dry, both extremes will result in a dense crumb. You can check to see if you are using the right amount of water for the type of flour you use (click here to check). And make sure you are measuring using the scoop-and-sweep method, click here for a video of that.

Can you let homemade bread rise too long? ›

If the dough has risen too long, it's going to feel fragile and might even collapse as you poke it,” says Maggie. If this is the case, there's a chance you can save your dough by giving it a quick re-shape. Learn more about this fix in our blog on saving overproofed dough.

What happens if I put too much yeast in bread? ›

Too much yeast could cause the dough to go flat by releasing gas before the flour is ready to expand. If you let the dough rise too long, it will start having a yeast or beer smell and taste and ultimately deflate or rise poorly in the oven and have a light crust.

What is a shaggy dough? ›

It literally looks like shag. Like, it's, like, falls apart easily. It's a little sticky. Um, so this is the first step. This is shaggy dough.

How do you keep no knead bread from sticking? ›

Oil or flour your tin or baking tray

You can use olive or vegetable oil, lard or butter to grease your tine and prevent your loaf from sticking. If I am using a baking tray for a free form loaf then I will dust it with flour, rice flour or semolina to prevent any sticky bits of dough cementing themselves to the tray.

Is vinegar a dough enhancer? ›

Though the science is sketchy, a few professional pie bakers swear that it improves the texture of the crust, and they wouldn't dream of making pie dough without it. (Others swear by similarly acidic ingredients like lemon juice.) The acidic properties of vinegar inhibit gluten, some will say.
