Are you a SUPER CHUNKY Granola fanatic? Like, no, I mean, for real chunky granola clusters fanatic? If so, I’ve got just the healthy chunky granola recipe for you!

If you’ve ever met my sister, Penny, you’d know a couple things about her. Right off the bat. She’s kind, bright and funny, warm and intelligent, puts people at ease (like, instantly)… and has a cheesy, like hella cheesy, sense of humor. And, drumroll please:

She LOVES chunky granola.

Like if the FBI were putting together a dossier or vetting her or some fancy-sounding thing like that, there would be a section, in bright, yellow highlighter saying “LOVES CHUNKY GRANOLA” in the Top Weaknesses section of her, ya know, dossier.

So guess what I’ve been trying to create for years and years and decades and millennia? A homemade and healthy chunky granola recipe with chunky granola clusters that would put an end to all chunky granola cluster recipes. Like, even better than the super cluster-y Homemade Chunky Paleo Granola that she knows, loves, and makes once every few weeks. And this is it, folks.

Call the FBI or the Agents of S.H.I.E.L.D. or Space, because I’ve got exactly what they need to take Penny down! Or, er, make her super, duper happy!! 😉 LOL.

How to Make Chunky Granola

Learning how to make chunky granola is easy! Add all dry ingredients to a bowl and stir. Add wet ingredients and stir until well coated. Pour the granola mixture onto the sheet. Press and pack it all down into one tightly-packed layer.

Nudge a small divide in the center of that layer and bake. Cool completely, then break apart the granola into your preferred size of cluster. Or, just eat it like one BIG sheet of granola! 😉

The Trick to Super Chunky Granola Clusters

The trick to making my super chunky clusters in this homemade chunky granola cluster recipe? Baking all the granola in one large sheet. With, like, a split right between the middle of that sheet (for a lil’ extra air to come through).

I tested trial after trial, made adjustment after adjustment, until I could bake this healthy chunky granola in one layer—without any soft, chewy texture in the center. You seriously get crispy clusters all the way through.

Description

Healthy Chunky Granola Recipe (Vegan, GF): learn how to make chunky granola with clusters! The best homemade chunky granola—vegan, gluten free & yummy! Super chunky clusters with crispy edges, packed full of nuts & nutrients. Dairy-Free, Refined Sugar-Free.

Ingredients

Scale

  • 1 ½ cups nuts, roughly chopped
  • 1 cup unsweetened coconut flakes
  • ½ cup gluten free rolled oats
  • ¼ cup ground flaxseed
  • ½ teaspoon ground cinnamon (optional)
  • ¼ teaspoon ground nutmeg (optional)
  • ¼ teaspoon salt (optional)
  • 1 tablespoon coconut sugar
  • 2 tablespoons melted coconut oil
  • ¼ cup pure maple syrup

Instructions

  1. Preheat the oven to 300°F. Line a medium or large baking sheet with parchment paper or greased foil. Set aside for later.
  2. Add all ingredients except coconut oil and maple syrup to a large bowl. Stir until well mixed.
  3. Add coconut oil and maple syrup. Using a rubber spatula, stir and fold until well mixed.
  4. Pour mixture onto the prepared baking sheet. Using a rubber spatula, press down and pack the granola mixture together to create an even, flat, and very tightly-packed layer, about ½ inch thick. Your granola may not cover the entire baking sheet. Now, nudge the sheet of granola apart in the center (dividing the tightly-packed layer in half), to let air through.

  1. Bake for 20 minutes. Rotate baking sheet. Bake for 18-22 more minutes, until granola is a deep golden brown. Mine took 40 minutes total. Do not flip or move granola—it is fragile and needs to crisp up while cooling.
  2. Place baking sheet on a cooling rack. Allow to cool for about 30 minutes, or until completely cooled and firm. Break sheets of granola into clusters. Enjoy! Storing instructions below.

FAQs

What ingredient makes granola clump together? ›

Clumpy Granola Method: Add Egg White

About this method: According to Deb Perelman of Smitten Kitchen, “Nothing glues like protein.” While there are many granola recipes that include an egg white, I got this tip from the Big Cluster Maple Granola recipe in The Smitten Kitchen Cookbook.

Why isn t my granola chunky? ›

You need to stir the granola as it bakes to encourage even toasting. But, about halfway through the total bake time, just let it be. As the sugars caramelize, they cause the ingredients to stick together and eventually form those oh-so-desirable clusters. Stirring breaks up the clusters, so leave it alone.

Is gluten-free granola good for you? ›

Provides essential nutrients

Gluten-free granola can be a good source of important nutrients like vitamins, minerals, and antioxidants. Depending on the ingredients, it can provide essential nutrients like iron, magnesium, and vitamin E.

Why are homemade granola not crunchy? ›

Until I ran into a clever trick, courtesy of Julia Turshen's new cookbook Simply Julia for getting granola as crispy as you want it: add egg whites. Per Turshen, for every three cups of rolled oats you want to transform into granola, add a ¼ cup each maple syrup and olive oil.

What is a good binder for granola? ›

Chia seeds are often praised for their binding powers. In fact, they secure ingredients so well that they can even be used as an egg replacer. Adding just a spoonful of chia seeds to your favorite granola bar recipe will make a huge difference in its texture.

What is the best binder for granola? ›

Nut butter is a super flavorful fat that serves multiple purposes in granola. It acts as a binding agent—along with additional coconut oil and whatever natural sweetener I've chosen—helping to pull the dry ingredients together into a wet, sticky mass for baking.

How can I get my homemade granola to clump? ›

If you're willing to re-bake it a bit, a drizzle of honey or agave syrup will make clumps. Just bake for about 20 minutes, and start with hot syrup. You want to make sure to get some water evaporating and sugars changing. It will solidify as it cools.

How do you keep homemade granola crispy? ›

Whether it's homemade or store-bought, properly storing granola will help extend the shelf life and maintain crunchiness. Store granola in an airtight container or tightly sealed zip-top bag in a dry, dark place away from heat.

Does homemade granola get crunchy as it cools? ›

Your homemade granola will continue to crisp up as it cools. It's tempting to start eating it as soon as it comes out of the oven, but if you let it rest for 15 minutes on the sheet pan, it'll be extra crisp and toasty – totally worth the wait!

Does Greek yogurt have gluten? ›

Because milk and live active cultures are the only ingredients used, plain Greek yogurt is gluten free most of the time. Though there is always a chance of cross-contamination with gluten from other products a manufacturer produces that possibly do include gluten-containing additives.

Is Chick Fil A granola gluten-free? ›

The granola doesn't have any gluten-containing ingredients. But since it isn't made with gluten-free oats, there is a risk of cross-contamination. The cookie crumbs topping is not gluten-free, either. Waffle potato chips: As with many brands of potato chips, these are gluten-free!

Should celiacs eat gluten-free oats? ›

Oats without a gluten-free label are not considered safe for those who have celiac disease. Specialty gluten-free oats are grown, harvested and processed in a way that keeps them away from other grains and the high risk of gluten contact, and are widely accepted as safe for those with celiac disease.

What ingredients should you avoid in granola? ›

Check the ingredient list, avoiding products that list sugar or sweeteners —including natural sweeteners like honey — within the first few ingredients. Instead, the first few ingredients should be whole foods, such as oats, nuts, seeds, and dried fruit. You may also want to look for varieties high in protein and fiber.

Why is granola not vegan? ›

Is granola vegan? Not all granola is vegan, despite the fact it contains many fruits and grains. This is because honey can often be used as a sweetener and binder in granola clusters, so if on a plant-based diet, always check the label to see whether it is suitable.

Is it cheaper to make your own granola? ›

Is Homemade Granola Cheaper? Initially, you'll have to spend more money on homemade granola than store-bought. However, over the long run (depending on your recipe) you'll most likely spend less on making your own granola.

How do you get granola to stick together? ›

Make sure that whichever granola recipe you use, it calls for some liquid, typically oil of some kind (I recommend olive oil for a subtle earthy, floral flavor, or melted unrefined coconut oil for subtly coconutty flavor). The liquid will help the chia seeds to gel, ensuring the granola sticks together.

How do you hold granola together? ›

Honey – Along with the nut butter, it helps all these ingredients stick together!

How do you make granola clump after baking? ›

Overnight granola: Alternatively, bake the granola for 10 minutes at a higher temperature -- 375° F -- then turn off the oven and leave the granola in overnight. You'll end up with clusters like you've never seen them before.

What makes granola not GF? ›

Most granola contains oats and oats in their pure form are gluten free. However, because most oats are processed in facilities that are producing grains like wheat, barley, and rye, they can contain traces of gluten.
