What is a latte?
Traditionally, a latte is espresso shotswith steamed milk poured over the top. Iced lattes are usually made by pouring hot espresso shots over ice and then filling the cup the rest of the way with milk. Of course, you can use any type of milk to do this.
In this Whole 30 latte recipe, I use cold brew coffee instead of espresso shots.
First because cold brew coffee is easier to make at home than espresso (not sure how to make cold brew coffee? I like this cold brew coffee recipe from Thomas Joseph on the Martha Stewart website). You don't need any special equipment to make this delicious low carb coffee.
Second because cold brew coffee is sweeter, smoother and less bitter than coffee made using steam or hot water. When you are on an eating plan that doesn't let you add sugar to counteract bitterness, it makes a big difference in taste! Even people used to adding sweetener to their lattes find that by using cold brew instead of espresso, they don't need sweetener.

A Whole30, Paleo, Gluten Free, Vegan and Keto Recipe
Ingredients

Let's talk about these ingredients for a minute.
Cold brew coffee: Even though iced lattes are traditionally made with hot espresso shots poured over ice, this latte is made with cold brew. You can make your own cold brew coffee at homeor buy it pre-brewed in stores. Cold brew coffee is smoother and less acidic than coffee made with a hot brew method. It makes the perfect base for Whole 30 and keto coffee drinks because it doesn't need sweetener to counteract the bitterness or acidity.
NutPods:NutPods is a delicious combo of coconut cream and almonds. It is free of carrageenan and completely unsweetened, making it an officially Whole30 approved coffee creamer. It is vegan, gluten free and also happens to be low carb, so it's perfect for keto coffee recipes as well.
