Ingredients

Spicy tomato mayonnaise

  • ½ cup 120 ml mayonnaise
  • 1 tbsp 1 tbsp tomato paste
  • 1 pinch 1 pinch cayenne pepper
  • salt and pepper

Zucchini fries

  • 1 (7 oz.) 1 (200 g) zucchini
  • 1 cup (4 oz.) 240 ml (110 g) almond flour
  • 1 cup (2¾ oz.) 240 ml (80 g) shredded Parmesan cheese
  • 1 tsp 1 tsp onion powder
  • 1 tsp 1 tsp salt
  • ½ tsp ½ tsp pepper
  • 2 2 eggeggs
  • 2 tbsp 2 tbsp olive oil

Burger

  • 1 tbsp 1 tbsp butter or olive oil
  • 1 (4 oz.) 1 (110 g) red onion, thinly slicedred onions, thinly sliced
  • 1 tbsp 1 tbsp red wine vinegar
  • 1½ lbs 650 g ground turkey
  • salt and pepper
  • 4 oz. 110 g goat cheese
  • 3 oz. (213 cups) 85 g (550 ml) lettuce

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Mix all ingredients for the tomato mayo and set aside in the fridge.

  3. Line a baking sheet with parchment paper.

  4. Cut the zucchini lengthwise and remove the seeds. Divide into rods, about ¼ to ½" (1-1.5 cm) thick.

  5. Crack the eggs in a bowl and whisk to combine.

  6. Mix almond flour, parmesan cheese, onion powder, salt, and pepper on a plate.

  7. Toss the rods in the flour mixture, then dip each rod in the eggs to cover. Finish with another coating of flour.

  8. Place the fries on the baking sheet and drizzle olive oil on top. Bake in the oven for 20-25 minutes or until golden brown.

  9. In the meantime, prepare the burgers. Sauté the onions in butter until soft on medium heat. Add the vinegar towards the end, give it a stir and reduce until creamy. Add salt and pepper to taste. Set aside until serving.

  10. Shape the burger patties and fry or grill them to your liking. Season with salt and pepper.

  11. Place the burgers on beds of lettuce and the onion mixture. Place the goat cheese on top and serve with zucchini fries and spicy tomato mayo.

Tip!

You can make oven-baked fries from a variety of vegetables that are low in carbs - for example green asaparagus, green beans, or yellow beans. Remember, it’s always fun to play with your vegetables!

    I made this dish last night to rave reviews. The zucchini fries were fantastic, and even a hit with my very picky 11 year old son who will do anything to keep from eating any sort of vegetable whatsoever. My husband prepared the hamburger patties, adding his own selection of spices to punch up the flavor of the beef. Will definitely make this recipe again.

    I am confused about vegetables, how can i estimate them cause one Zucchini can be 200g and another one can be 50g and same for onions, is it possible that recipes contain all veggies by weight.

    This meal was delicious, truly, BUT it took my son and I one hour of hands on time, NOT 10 minutes!! And it is in Quick and Easy Meal Plans #4 ... please change the prep time and move it from that meal plan. Though delicious, it made for a really stressful evening, not a quick and easy one! Thank you!

    I didn't love it. It took a long time to cut and dip the zucchini and wasted quite a bit of the parmesan cheese and almond flour. I'm glad I tried it anyhow. I don't like goat cheese so used something like swiss instead.

    Husband rating 4.5 My rating 4.5 Changes- Zuchinni fries were time intensive and there was actually double the seasoning as would stick to the zuchinni so I just coated another 1/2 of zucchini and made double the fries. I used forks to dip the zucchini to keep from getting the seasoning all over my fingers, but I think I would skip the first coating instead I'm going to try putting all the zucchini into the egg batter at one time, and then transfer them all at once into a big bowl with the seasoning and toss them in the batter. for a couple of them I just coated them with egg, put them on the sheet and poured the seasoning over the top. Honestly tasted the same. Would have saved at least 20 minutes. husband loved the dipping sauce and I'll make this all the time now as a sugar free alternative to ketchup. Thank You!
    Also skip the step of sautéing the onions, just use raw instead, I think I like that flavour better and that would have saved time. But the onions did make it feel extra fancy along with the goat cheese.
    Turkey seemed bland to me even though I had lots of Costco Montreal Chicken seasoning on them. I think I'll try what's in the other burgers as a mix in to make them more jazzed up.
