Sticky banana, tahini and walnut bars–speed to make and they taste so good! Another variant of my classic banana bar recipe–but I thought still worth posting–just too good not too.

Packed with lovely middle eastern flavours with the tahini, dates and sesame seeds and then topped with sliced bananas which go all sticky and gooey and then drizzle with some maple for added stickiness! Yum.

You can make them gluten-free by using gluten-free oats. They are absolutely perfect for breakfast or pudding!

Sticky banana, tahini and walnut bars - packed with lovely middle eastern flavours with the tahini, dates and sesame seeds and then topped with sliced bananas.

Prep time: 10 minutes mins

Cook time: 25 minutes mins

Ingredients

  • 2 large ripe bananas
  • 5 medjool dates pitted
  • 3 tbsp tahini
  • 100 g oats of choice–use gluten-free if preferred
  • 1 tsp baking powder
  • 1 tsp all spice
  • 1 tsp cinnamon
  • Pinch sea salt
  • 1 tbsp coconut yogurt/coconut cream or any yogurt
  • 50 g walnuts chopped roughly

For the toppings

  • 1 banana sliced lengthways into 4
  • Walnuts to sprinkle
  • Drizzle maple syrup
  • Sesame seeds to sprinkle

Instructions

  • Pre heat your oven to 180c.

  • Add the banana, dates and tahini to your food processor and blitz to a paste.

  • Next, add in the all cinnamon, spice, salt, baking powder. Blitz again, then add in the oats and coconut yogurt and pulse so that everything is combined.

  • Finally, add in the walnuts and pulse twice to mix through.

  • Line your baking tray with baking paper, then add the mix to the bottom. Press into the corners, Top with the sliced banana and more walnuts–press in a little. Sprinkle with sesame seeds and drizzle maple syrup.

  • And then bake for approx 20-25 minutes.

  • Allow to cool a little before eating–if you can!

  2. One of my favorite snacks to make, especially when I am looking for a treat – literally combines all of my favorite things into one. Even better when my partner (who is vegan and sugar-free) loves it! I sprinkle coconut flakes on it too 🙂 and when need an extra protein boost, top it with any nut butter.

    So addicted to this recipe! Can’t stop making it and eating it! Love that there is no added sugar. Love it when it gets firm and cold in the fridge. I pair it with my frozen banana ice cream made just with frozen bananas and lemon juice in my Thermomix for dessert xx

  6. Hiya, these look awesome and kid friendly as they have no added sugar. My son has a nut allergy and hasn’t tried walnuts yet. If I left these out would I need to compensate with any other ingredient?

    I made it for breakfast today because who can resist banana and tahini (peanut butter in my case) mix?? Super quick and easy recipe.

    My only problem is sweetness of this bake. I knew adding both dates and bananas will be too sweet for my taste but wanted to try the original recipe before making adjustments next time I bake it.

  11. Niki, I’ve been eyeing this up all weekend – some very ripe bananas sat in my kitchen that desperately need to be eaten / put in a bake! – but I don’t have any dates (or dried fruit) in the house. Could I sub more banana and maybe some honey / maple syrup in place of the dates? What would you suggest? I’m concerned about the mix being too dry if I were to add sugar as a sweetener.
