I can make bagels? At home? Yes! Yes you can. Not only will they be the best bagels you have ever had but they will be the easiest too.

Using the bread machine to do all of the heavy lifting for us, this recipe will only leave you to shape, boil, and bake your homemade bagels (and of course, pick your toppings-the best part)

Just dump the ingredients in your bread maker pan, push a button, and the mixing, kneading, and rising are all magically taken care of. Not to be dramatic, but my bread machine totally changed my life. Who has time to make weekly loafs of bread? Me actually, now that I have my bread machine. Ingredients needed for this bagel bread machine recipe

With only 8 basic ingredients, you likely have everything in your pantry right now. Here are the ingredients needed for this bagel bread machine recipe:

The BEST Bagel Bread Machine recipe | simple and easy! (3)
  • 1/2 cup Warm water
  • 1/2 cup Warm milk
  • 1 Egg
  • 6 tbsp melted Butter
  • 1/3 cup sugar
  • 3 3/4 cup King Arthur Bread flour (or all purpose flour)
  • 2 1/4 tsp instant yeast
  • 1 tsp Salt

Optional:

  • Toppings: Toppings I used for this bagel bread machine recipe are Jalapeno and cheddar, everything bagel seasoning, sesame seeds, and a cinnamon sugar mixture.
  • 1 egg, 1 Tbsp of water for an egg wash. An egg wash will give your bagels that golden brown color.

Tools needed

  • Bread machine: I have an older bread maker I got from the thrift store and a newer model, both work great. The newer models have a lot more settings to work with, which I love. Settings such as making quick breads, jellies and even sourdough. These machines are worth the slight investment if you ask me!
  • Large saucepan: You’ll fill this with water to boil your homemade bagels
  • Baking sheet: You can use a silicone mat or just parchment paper. be sure to oil your parchament paper first to prevent your bagels from sticking.

How to make this bagel bread machine recipe

First, Place all of your ingredients in the order listed above, (Water, milk, egg, butter, sugar, flour, salt and yeast) Set the bread machine to the “dough” setting and press start. The dough setting will mix the dough and allow for a dough rise.

When the machine cycle is done, punch down the dough in the pan and let it rest for 10 minutes. Remove dough from bread machine and divide it into eight equal pieces, then shape each piece of dough into a small ball by rolling it gently in a circular motion on the (un-floured) counter.

If you are making the jalapeño cheddar flavored bagels, I suggest taking your desired amount of dough pieces, and kneading the jalapeños and cheddar in before shaping the dough into balls. The flavor is phenomenal.

Once you form the dough balls, coat your finger in flour and press into the center of each dough ball to form a ring. Stick both pointer fingers inside the hole and swirl your bagel dough around your fingers, gently stretching the ring into a bagel shape. Cover bagels with a towel.

While bagels are resting, preheat oven to 350 and bring a large saucepan of water to a boil.

Place 2-3 bagels into the boiling water with a slotted spoon (or by gently lowering them into the water). Let bagels sit in boiling water for 1 minute, then flip and allow to sit in water for an additional 1 minute (the longer they are in the water, the chewier the texture will be).

Remove from water and place on baking sheet lined with a silicone mat or parchment paper. Using a pastry brush, brush bagels with egg wash (1 beaten egg and 1 tablespoon water).

Add desired toppings. To make multiple flavors of bagels in one batch, pour your toppings onto different plates. Dip each bagel into the different topping to create a multiple flavor batch of homemade bagels, or leave your bagels plain, if desired.

I have found that dipping the bagels into the toppings instead of sprinkling the toppings on creates a more even coated bagel, plus prevents the others from accidentally getting the other flavors on them, if making a multi flavored batch.

Can I make this bagel recipe without a Bread machine?

To make this recipe without a bread machine, just knead your dough for about 10 minutes by hand, or in the bowl of a stand mixer with a dough hook attachment for about 5 minutes then let the dough rise for 1 hour.Filling the same directions to shape, boil and bake from above, or on the recipe card at the bottom of this post.

Can I make these bagels in advance?

Yes! Just follow the recipe through shaping the bagels. Let the shaped bagels sit at room temperature for 15 minutes, and then put them in the fridge (covered in plastic wrap) overnight. In the morning, take out the bagels and allow them to come to room temp for one hour, and then boil and bake per the recipe. Then enjoy a fresh, chewy bagel for breakfast!

How to store homemade bagels

These bread machine bagels are best when eaten the day of baking.

You can store any leftovers in a zip-loc bag or sealed container on the counter. You may experience a bit of shrinkage as the bagels lose moisture. Keep in mind that these bagels don’t contain any preservatives, so like any homemade bread, they should be eaten within a few days.

You can also freeze the bagels, sealed tightly in a freezer bag.

FAQs

How do I make my bread machine bread better? ›

Some recipes will advise adding sugar, which, in addition to making the bread a little sweet, helps the yeast to rise better. Others also suggest adding a little oil, such as olive or vegetable oil. This helps the dough form, preventing it from sticking to the sides of the pan, and makes the bread more tender.

What is the order of ingredients for a bread machine? ›

You add the ingredients, and the bread machine makes and bakes the bread in one handy appliance. Liquid ingredients are added first, then oils or fats, dry ingredients, and finally yeast (if your recipe calls for it). The machine will mix, knead, rise, and bake the dough to a beautifully soft bread with a crisp crust.

What is the difference between bread dough and bagel dough? ›

Both bagels and bread contain yeast, flour, water, and sugar. However, many bagel recipes use barley malt syrup, a grain-based sweetener, instead of granulated sugar. Bagels also generally contain less water and more flour compared to other bread types, which is why bagels are denser than typical slices of bread.

What kind of flour is best for bagels? ›

Bread flour – Because of its high protein content, bread flour makes these homemade bagels delightfully chewy. This recipe also works with all-purpose flour, they're just a bit less chewy than bagels made with bread flour.

What makes a bagel better? ›

A good bagel should have a thin, shiny, crackly crust spotted with the kind of microblisters that you can only get from proper boiling followed by a high-temperature bake. It's these little bubbles that add both surface area and crunch.

Is it cheaper to buy bread or make it in a bread machine? ›

Making bread from a machine is marginally cheaper than buying it, as long as you eat bread frequently enough to offset the cost of the appliance. Specifically, I see this as an investment that's smart for households that go through bread quickly, like large families or homes with multiple roommates.

Why is my breadmaker bread so dense and heavy? ›

Too much heat or humidity might lead to a too-quick rise and a crevice near the center of your bread. Conditions that are too cold might delay proofing or rising, resulting in a super-dense loaf. The bread machine works on a timer and hums along at its regular pace.

How do you make bread lighter and fluffier? ›

All it takes is a small amount of dough enhancer per loaf to create a much lighter and fluffier result. Using a dough enhancer like Vital Wheat Gluten works to improve the texture and elasticity of the dough and elongate the strands of gluten. Doing so allows more room for the gas in the dough to develop and rise.

What flour is best for bread machine? ›

Most bread machine manuals and cookbooks call for bread flour rather than all-purpose flour. King Arthur Unbleached All-Purpose Flour, because it's higher in gluten than national brands of all-purpose flour, works perfectly in the bread machine.

Do you put yeast in bread maker first or last? ›

Adding Ingredients to the Bread Machine

Manufacturers usually recommend adding the liquids first, followed by dry ingredients, with the yeast going in last. This keeps the yeast away from the liquid ingredients until kneading begins.

Which is healthier bagel or bread? ›

In terms of calories, on average one bagel has more calories than one slice of bread. However, if you choose to have a bagel with more fibre, this may help you feel fuller for longer and potentially reduce your snacking throughout the day.

What makes bagels taste like bagels? ›

Ingredients like malt syrup and high-gluten flour create a slightly sweet dough with an unmistakable chewiness. The overnight “curing” that rising bagel dough undergoes adds a very subtle tang that makes bagels stand out from regular bread.

Why are bagels more unhealthy than bread? ›

First, bagels can have more calories and carbs than bread because the serving size tends to be higher. However, this does not inherently make bagels less healthy, it just means when you eat a bagel you need to pay attention to how much you're eating and what you're pairing with it.

Why do people boil their bagels before baking? ›

The reason we boil the dough first is so that the outside crust sets before it goes in the oven. We generally let the dough boil for 30 to 60 seconds on each side, but the longer you let it boil, the thicker and chewier the crust. The amount of time the bagel is boiling also affects its interior texture.

Why are my homemade bagels so dense? ›

If your dough is too wet, it'll create large holes in the crumb of the dough and your bagels will be more like French bread, with a fluffy interior (see top photo). When too much flour is kneaded in, bagels become dense, hard and tough, instead of crisp and chewy.

What makes bagels in New York so good? ›

a regular bagel is the water you boil them in. Much like a specific vineyard terroir is used to make a wine, certain minerals in New York City tap water are attributed to creating the best bagels. These include low concentrations of calcium and magnesium and a high level of sediment.
